Ingredients:
3-4 lb. beef chuck roast
2 tablespoons vegetable oil
1 onion, chopped
3 cloves garlic, minced
4 carrots, peeled and chopped
4 celery stalks, chopped
1 cup beef broth
1 cup red wine
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 tablespoon dried thyme
Salt and pepper to taste
3-4 potatoes, peeled and chopped
Directions:
Preheat your oven to 325°F.
Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat.
Season the beef chuck roast generously with salt and pepper on all sides.
Once the oil is hot, add the beef chuck roast to the pot and sear it on all sides until it’s browned and crispy. Remove the beef chuck roast from the pot and set it aside.
Add the chopped onion, garlic, carrots, and celery to the pot and sauté for 3-4 minutes until the vegetables are softened.
Add the beef broth, red wine, tomato paste, Worcestershire sauce, dried thyme, and salt and pepper to the pot. Stir to combine.
Return the beef chuck roast to the pot, ensuring it’s submerged in the liquid.
Cover the pot with a lid and transfer it to the preheated oven.
Cook the pot roast for 2-3 hours, or until the beef is fork-tender and falls apart easily.
Remove the pot from the oven and add the chopped potatoes to the pot. Cover the pot and return it to the oven for another 30-45 minutes, or until the potatoes are tender.
Tips:
Use a meat thermometer to check the internal temperature of the beef. For medium-rare, the temperature should be 135°F; for medium, it should be 145°F; and for well-done, it should be 160°F.
You can substitute red wine with beef broth or water if you don’t have red wine.
Don’t skip the searing step, as it adds a lot of flavor to the dish.
You can add other vegetables to the pot roast crockpot, such as mushrooms or parsnips.
